Eat Wight
In the Wight Taste Trail, Wightlink plotted a course through some of England’s most scenic countryside to create a 20-stop gourmet trail, featuring the pick of Isle of Wight food producers and restaurants demonstrating the strongest commitment to cooking with fresh Island ingredients.
Now we have gone one stage further to bring you a collection of highly imaginative recipes created by Island food specialists and by chefs from the highly-rated Hambrough, St Helens and Seaview restaurants on the Isle of Wight. The recipes spotlight the diverse range of foods which have helped to gain the Isle of Wight a growing reputation as one of the UK’s top regional food centres. These include tomatoes, garlic, sweetcorn, exotic salad leaves and all manner of squash, as well as crab and sea bass from the waters around Wight, honey, free range beef, bacon and poultry and the blue cheese rated ‘Best British Cheese’ in the world awards.
In Eat Wight, we feature 12 recipes, ranging from Ben Brown’s great tasting Squash Gnocchi with sage, smoked tomatoes and Isle of Wight bacon to Mark Young’s Crab Brulée, which could almost be considered the signature dish for an Island famous for its fresh seafood.
There are two gourmet dishes from Michelin-starred chef Robert Thompson, newly installed as chef/patron at the fashionable Hambrough in Ventnor, and a light summer tart from Graham Walker, head chef of the Seaview. The duo behind the Real Island Food Company – Jackie Phillips and Rachel Foy – offer their unusual take on a British classic, tomato soup, and the country’s leading authority on garlic, Colin Boswell, shares one of his family favourites – Wild Garlic Tart.
